Cottage Pancakes

  • 3 eggs
  • 1 cup regular cottage cheese (can substitute for low fat cottage cheese)
  • 3/4 cup Almond Flour
  • 1 tablespoon brown sugar (or you can use any granulated sweetener of your choice)
  • 1/4 teaspoon baking powder
  • Cooking spray or Avocado oil
      Optional Ingredients
  • 1/4 tsp salt or to taste
  • 1 Tablespoon all purpose flour or GF Flour
  • 1/4 tsp baking soda mixed with 1/4 tsp vinegar
