Toasted Pecan Bundt Cake with Caramel Cream Cheese Glaze



INGREDIENTS:
FOR THE CAKE:
  • 2 cups chopped pecans
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 & 1/4 cups firmly packed light brown sugar
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1 cup milk
FOR THE GLAZE:
  • 4 ounces cream cheese, at room temperature
  • 3 tablespoons caramel sauce
  • 1 cup confectioners' sugar, sifted
  • 2 to 3 tablespoons milk
